I think there's enough to justify it, especially if you consider the blood
loss she begins to experience.  Moments later, she does begins speaking
total nonsense to Kaji and Pen Pen about drapes and whatnot.

Your opinion is a valid one.  It does come a bit abruptly.  But I
disagree, and I don't mean to argue with your personal opinion, which
again is valid, but I think it works well, particularly in that Anno found
a way to take Shinji, who was already in a broken state, and just shatter
him to pieces by taking his surrogate mother away from him in one of the
most messed up ways that was still reasonable, all things considered.

I love that The End of Evangelion is like a deal with the devil.  You get
to see pretty much everything you wanted to, but you get it in the most
messed up and emotionally traumatic way possible.
